- 180 grams sliced leek, (1 large Leek)
- 3 Bacon Rashes Trimmed, cut into 3 pieces
- 540 grams pumpkin, cubed Butternut or Jap
- 20 grams veggie stock paste
- 1 clove garlic
- 500 grams water

1. Place Leek, Garlic and Bacon in to TM Bowl.
Chop 3 Seconds/ Speed 5. Scrape down.
2. Saute 4minutes/ Varoma/ speed 1
3. Add pumpkin chop 15 sec/ speed 7. Scrape down
4. Add Veggie stock paste and water.
5. Cook 20mins/ 100 / Speed 1
6. Blend, 1 minute speed 5(gradually increasing to speed 9)
Serve with cream or coconut Cream

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Fabulous...so tasty. I make this soup pretty frequently so thank you for sharing.
Lovely pumpkin soup. Very easy.. I have made it lots of times now. I usually add a carrot and or a parsnip. I find the flavour is smoother and more intense with the butternut pumpkin. Also I have made it with chicken consomme which gives it a very intense flavour. I never blend the bacon. I hate the slightly grainy texture it gives I think it is a pity to miss out on that flavour burst. Sometimes I simmer it at the end, or even fry it till crisp and then add it. I have even made it with onions it I have no leeks. This is my 'go to' pumpkin soup. Thank you Monique for sharing.
