Ingredients
Pumpkin & Sweet Potato Soup
- 1 tbsp oil
- 2 leeks, sliced
- 500 grams pumpkin, peeled and diced
- 200 grams sweet potato, peeled and diced
- 500 grams chicken stock
- 1 can coconut cream
- Salt & pepper to taste

I'm cooking this todayRecipe's preparation
1. Put Leeks and oil in TM bowl. Chop 5 Seconds on Speed 7. Scrape down bowl.
2. Cook 3 Minutes, Varoma Temp, Speed 1.
3. Add into TM Bowl Pumpkin and Sweet Potato. Chop 10 Seconds on Speed 8. Scrape down bowl.
4. Add into TM Bowl Chicken Stock, Salt and Pepper. Cook 20 minutes, 100 degrees, Speed 1.
5. Add Coconut Cream, Cook 10 minutes, 100 degrees, Speed 1.
6. Blend for 15-20 seconds, slowly going from Speed 1 to Speed 9.
Method
Tip
This soup is 'cooked' after the first 20 minutes, but I find the extra cooking time after adding the coconut cream makes the soup extra smooth and creamy
To make this a Vegetarian Dish, use Vegetable stock & water instead of Chicken Stock.

I just tried this soup and it is delicious and so easy although I did add a small amount of potato and carrot with ginger but your instructions were very easy to follow
