Ingredients
Roasted Cauliflower & Pumpkin Soup
- 100 grams pumpkin, skin removed
- 300 grams cauliflower, florets
- 1 onion, peeled, halved
- 2 cloves garlic, peeled
- 15 grams olive oil
- 1 tbsp TMX stock concentrate
- 600 grams water
- 3 sprigs of thyme, leaves only
- Salt & pepper to taste
Optional
- homemade croutons
- crispy bacon pieces

Place Pumpkin & Cauliflower on baking tray lined with baking paper. Drizzle with Olive Oil and roast approx 40mins 180 degrees.
Place garlic and onion in TMX bowl - chop 3 seconds Speed 7. Scrape down sides.
Add Olive Oil. Saute 3mins Varoma Speed 1.
Add cooled Cauliflower & Pumpkin to bowl along with other ingredients.
Cook 15mins 100 degrees Speed 1.
Blend ingredients by slowly turning dial from Speed 1 up to Speed 9 for 30 seconds.
Serve with cracked pepper and optional croutons and bacon pieces.

Loved this soup.
Miss 11yo ate most of it before i could seperate some for lunches!
I also roasted the onion and garlic with the cauliflower and pumpkin and sprinkled the lot with chilli flakes for a little kick.
next time ill increase the pumpkin by 50g as i like a little more pumkin flavour
Our family loves this soup (kids 3 and 5yrs old included) I never weigh the pumpkin and cauli, I just chop up and fill a baking tray, sprinkle with ground cumin before roasting. I also add the garlic and onion in the oven as it deepens the flavour. When I chuck it all in the TM bowl I add a bit of grated fresh ginger (or jar if that's all that's on hand). We don't often do the bacon (only as it adds to the time) but the home made croutons are a must! We use chopped up sourdough, tossed in melted butter and sprinkled with Italian herbs - air fryer makes the best croutons as you can toss the basket regularly to get the crunch! 5/5 for a comforting winter soup 🍲
Thank you for this recipe. The soup was delicious. I added chilli as suggested by another reviewer and sprinkled the roast vegetables with a little cumin.
Served this up as an entree tonight for my dinner guests. They loved it. I used carrot as I didn't have pumpkin and added a dollop of Thermomix Cashew Sour Cream just before serving.

As long as you stay under the line of the jug you should be fine. In my opinion, a thermomix can burn as much as any HOT kitchen appliance. Use caution at all times. I have not made this soup with extra pumpkin so you may need to just experiment.
A newbie here, with all the fuss over thermo burns, what do you think is a safe amount to increase this recipe by. 100g pumpkin seems like a very small amount. Safe to double?
