Ingredients

Rosemary and Lemon Sweet Potato Soup

  • 1/2 lemon rind and juice
  • 2-3 sprigs rosemary
  • 2 cloves garlic
  • 1 brown onion, peeled and quartered
  • 30 g olive oil
  • 2 tablespoons EDC vegetable stock concentrate
  • 800 g sweet potato, peeled and roughly chopped
  • 750 g water, (or up to 250g more if you want a thinner soup)

Recipe's preparation

    Rosemary and Lemon Sweet Potato Soup
  1. Chop lemon rind and rosemary on speed 7 for 3-5 seconds

  2. Add onion and garlic, chop on speed 7 for 3-5 seconds

  3. Add oii, saute on speed 2 for 3 minutes on 100 degrees

  4. Add stock, lemon juice and water to the bowl. Place the sweet potato in the simmery basket. Cook on speed 3 for 25 minutes, 100 degrees.
     

  5. Use the spatula to empty the sweet potato from the basket into the bowl. Slowly pulverise from speed 1 to 10 for 1 minutes.

Tip

Serve as is, or add a dollop of sour cream, cream, creme fraiche and some rosemary and cracked pepper.
