Ingredients

Soup Ingredients

  • 2cm cube fresh ginger
  • 1 red chilli, deseeded if you want less spice
  • 1 Spanish onion
  • 1 teaspoon cumin ground
  • 1 tablespoon coriander ground
  • 20 grams olive oil
  • 900 grams cauliflower including leaves
  • 1 bunch coriander, roots, stems and leaves
  • 700 grams water
  • 1 heaped tablespoon vegetable stock concentrate
  • 600 grams chicken breast fillets

Recipe's preparation

    Method
  1. Add ginger, chilli and onion cut in halves into the bowl

    Chop sp7 3 sec

    Scrape down

    Add oil and dried spices

    Saute 3 mins, 120 deg, sp 1

    Add cauliflower and coriander

    Chop sp 7 10 sec

    you may need to use spatula through lid opening to push the cauliflower down

    Add water and stock

    Place chicken breast into varoma, if the chicken is thick slice in half length ways to thin out

    Place varoma into position

    Cook 25 mins, varoma , speed 2.5

    Remove varoma, place MC in place and blend soup sp5 1 minute, gratually increasing speed to 9

    Pour soup into a thermoserver

    Add chicken to bowl, reverse speed 4 10 sec

    Divide soup into bowls, top with shredded chicken and a sprig of coriander
