Ingredients
Sweet Potato and Pumpkin Soup
- 250 grams sweet potato, peeled and chopped 3 cm
- 250 grams pumpkin, deseed and chopped 3cm
- 1 portions onion, cut into quarters
- 70 grams ginger paste, or you can use fresh
- 20 grams extra virgin olive oil
- 500 litres Vegetable stock paste, Use vegetable stock paste
- 120 gram coconut milk, plus extra to serve
- 1/2 teaspoons chilli powder
- 1 lime
- Mixed fresh herbs, to garnish

Have the simmering basket instead of the mesuring cup. - 2. Add sweet potato, pumkin and ginger and saut'e for a furture 5 min/ 100c / speed 1
Have the simmering basket instead of the mesuring cup. - 3. Add 1 litre of the liquid vegetable stock, coconut milk, chilli powder. cook for 25 min/100 c/ speed 1
Have the simmering basket instead of the mesuring cup. - 4. once cooked, blend the soup for one min/ speed 5 - 10 gradudually increasing the speed until smooth.
The mesuring cup mut be on for this step. - 5. Serve the soup with frsh herbs and squeeze lime juice and you can add extra splash of coconut milk.
Add salt and pepper to taste if you like

Use you own vegetable stock paste for the liquid stock and make your own ginger paste.
Served with freshly home made crusty bread.

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
