Sweet Potato & Pumpkin Soup

  • 1 onion, approx. 80g cut into quarters
  • 1 clove garlic
  • 30 grams olive oil
  • 500 grams hot water
  • 2 tbsp Vege stock paste
  • 1/2 tsp sweet paprika
  • 1/4 tsp Turmeric, ground
  • 320 grams sweet potato, peeled and cubed
  • 320 grams butternut pumpkin, peeled and cubed

Recipe's preparation

    Sauté

  1. Add Onion and Garlic 

    Chop 3Sec, Speed 7

  2. Add Olive Oil

    Sauté 3 Min, 100°, Speed 1

    3. Cook

  3. Add Water, Vege Stock, Paprika, Turmeric, Sweet Potato, and Pumpkin

    Replace Measuring Cup with Simmering Basket

    Cook 20 Min, 100°, Speed 1

    4. Blend

  4. Replace Simmering Basket with Measuring Cup

    Blend 1 Min, Gradually increasing from Speed 3 to Speed 8

    5. Serve

  5. Serve immediately

    Season with Ground Pepper to taste

A smooth hearty soup best served with toasted wholemeal bread and butter.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).
