Ingredients

  • 30 grams olive oil
  • 1 large onion peeled and quartered
  • 200 grams chopped tomatos
  • 800 gram tin of tomatos, diced
  • 1 heaped tablespoon vegetable stock
  • 10 grams balsamic vinegar
  • 1 medium potato peeled and diced
  • freshly ground white pepper to taste
  • 1/2 bunch fresh basil
  • 200 grams water

Recipe's preparation

  1.  Add onion. Chop 5 seconds at Speed 5 then add oil and cook 3 minutes/ 100°C/ Speed 1

  2. Add tomatoes. Chop 5 seconds at Speed 5. Add water, stock, balsamic vinegar, salt, pepper, and diced potato. Cook 12-15 minutes/ 100°C/ Speed 1

  3. Add fresh basil and blend 40 seconds gradually increasing to Speed 10.

    Serve with garlic bread.

    Tomato soup/pasta sauce: Yum!

    my tweaked version:




    1 clove garlic






    1 large onion peeled and quartered






    30g olive oil






    1kg chopped fresh tomatoes






    1 heaped tablespoon vegetable stock / 2/3 tsp salt






    10 grams balsamic vinegar






    no potato






    freshly ground white and black pepper






    1/2 bunch fresh basil






    no water






    1 tbsp tomato paste






    (1-2 packets sugar (those that come with tea) if making this into a pasta sauce)




    In Step 2, I cooked it for 13 minutes, added the 1 tbsp tomato paste, then a further 5 minute on varoma, MC off to thicken the soup. Even then, the resultant soup is still not creamy (as I didn’t have potatoes), but delicious nonetheless. Next time I might try cooking for 15 minutes (10 min MC on, 5 min MC off).

    I actually really enjoyed the slightly chunky texture so did not blend the soup after cooking. After adding the sugar I felt it would make the perfect pasta sauce!

    Absolutely delicious. I used all fresh tomatoes. Used a sweet potato which I put on top on the onions in the basket as it cooked just to make sure it was well cooked. Lovely flavour. Next time I will wizz it a bit more at the end as I got some seeds, but then I did use all fresh tomatoes. Thank you.

    Yummy. Did not add extra salt. Used black peppe, sweet potato and cooked for 20 mins. Enjoyed with herb bread

    Very tasty. Only used homegrown tomatoes will definitely make again - made as per recipe without salt as the homemade vegetable stock has plenty

    Just made this soup and it was delicious! I added a bit of chili and garlic with the onion and put a rind of parmasaen in while cooking. Will make it again and again!

    Delicious tomato soup. I added a clove of garlic and half a red pepper with the onion. I substituted sweet potato for potato. I had to cook for 25 to 30 minutes until the sweet potato was soft before liquidising.
