Ingredients

Vegetable Soup

  • 1 onion, Cut in quarters
  • 2 cloves garlic
  • 1 tomatoes, Cut in quarters
  • 2 carrots, Cut in quarters
  • 5 zucchini, Cut in quarters
  • 1 heaped tablespoons Vegetable Stock.
  • 350 grams water, hot
  • 1 bunch spinach, or Bok Choy
  • 2 portions potatoes
  • 1 bunch green beans
  • 1 --- Vegetables, 1 kilo in total
  • 50 grams olive oil

Recipe's preparation

    Vegetable Soup
  1. 1. Place onion, garlic cloves and celery in mixing bowl and top with your Measuring Cup, then chopBlend"Blend" 6 sec/speed 6.
  2. 2. Scrape the bowl down with spatula.
  3. 3. Add Olive Oil, top with your Measuring Cup and sautee 4 mins/98C/speed 1.5.
  4. 4. Add tomatoes, carrots, zucchini and the rest of the veggies, top with your Measuring Cup, then chop 10 sec/speed 6.
  5. 5. Scrape the bowl down with spatula.
  6. 6. Add Vegetable Stock and water, then top with your Measuring Cup and cook 18 mins/98C/speed 1.5.
  7. 7. Season to taste.
  8. 8. Blend 40 sec/speed 6 gradually increasing to 9.
  9. 9. Serve and top with remaining basil leaves for decoration.

Tip

You may like to add a dollop of Greek Yoghurt or Sour Cream when serving to make it creamy. Please note though, if you do, it will obviously not be dairy free then.
