Ingredients

cauliflower

  • 1000 grams cauliflower, cut into florets
  • 1 Large Brown Onion, cut into halves
  • 1 tablespoon olive oil
  • 3 large potatoes, approx 450g, cut into chunks
  • 2 cloves garlic, peeled
  • 2 teaspoons ground fennel seeds
  • 1/2 teaspoon turmeric
  • 1-2 tablespoons vegetable stock
  • 750 grams water
  • 250 grams Milk of choice
  • 2 tablespoons chives, finely chopped

Recipe's preparation

    Method
  1. Preheat oven to 200C or 180C fan forced. Line a baking tray with baking paper or TM oven mat. Place cauliflower on the prepared tray and bake for 15-20mins or until tender.

     

    Meanwhile, place garlic, onion and oil into TM bowl and chop speed 5 for 3 seconds. Scrape down side of bowl.

     

    Saute on varoma for 3-5minutes speed 2.

     

    Add chopped potatoes, fennel seeds and turmeric and cook for 5minutes at 100C speed 2.

     

    Add the stock and water and cook for a further 10mins, 100C speed 2.

     

    Add reserved roasted cauliflower and milk and cook for 5mins, 100C speed 2.

     

    Puree soup at speed 5 gragually increasing to speed 9 for 2 mins or until smooth.

     

    Garnish with freshly ground pepper and sprinkle with chives tmrc_emoticons.)

Tip

By roasting the cauliflower first it creates a deeper level of flavour.

    I couldn't fit it all in my TM5 bowl so had to leave out the milk!  I found this recipe to be a little bland and I followed the recipe exactly up to where the milk was to be added.  The bowl was so full that I couldn't fit the milk in so not sure if this would have made a difference to the end flavour.  A little disappointed with the end result given the other ratings.

    I don't understand how you can get 1000g of cauliflower and all the other ingredients into the thermomix...  maybe the recipe works if you halve all the quanties  but I couldn't do as instructed.  Having said that though,  what I did end up with tasted very good so thank you for the inspiration.  I used sweet potato instead of potato and as I didn't have any fennel I used garam masala!

    Amazing soup!!! I only made 1/2 of it and it was enough for four serves. I also used sweet potato instead of potatoes. Thank you for sharing it!!!!

    This is the best cauliflower soup I have ever made. Definitely worth the extra effort of roasting the cauliflower the flavour is beautiful. I made the recipe without any changes- perfect!
