Ingredients

soup

  • 500 grams broccoli, roughly chopped (including the stem)
  • 3 stalks spring onions, roughly chopped
  • 3 teaspoons stock paste, or powder (veg or chicken stock)
  • 50 grams blue cheese, strong and australian (mainland special reserve blue vein is strong, australian and cheap!)
  • 650 grams boiled water
  • few pinches black pepper, freshly ground

Recipe's preparation

    soup
  1. put water on to boil in a kettle.

  2. add roughly chopped broccoli and spring onions the thermomix.

    chop on speed 6 for a few seconds to break down.

     
  3. add boiled water, stock and black pepper. 

    varoma setting, speed 3 for 8-9 mins.

  4. add broken blue cheese.

    mix on speed 2-3 to combine, then slowly up to speed 10 for approx. 10-15 secs to blend.

    add salt to taste.

  5. serve immediately as the broccoli will slowly cook and gain a less appealing shade of green.

    garnish with a grind of freshly ground pepper...

Tip

it should keep in the fridge for a few days. if freezing, it may curdle when defrosted, but should heat up just fine...

    I used 1/2 cauliflower and half broccoli for this recipe.  I think it was a mistake as it was very lumpy and watery.  Also, even though I am a big blue cheese fan - i did not like it in soup.  Too pervasive.  I think I will try it with potato and Parmesan cheese.

    Just made this.  Put less water and added some sour cream.  It was very yummy.  So quick and easy  tmrc_emoticons.)

    Nice tasty soup. Initially when I put the broccoli in the TM it did not break it all down there were florets of broccoli still intact so I waited for the water to be added and then blitzed it.  Personally I did not think it required salt, so perhaps a taste test before salt is added. Personal preference I did feel it could Have done with half milk half water to give it a creamier taste, but that was easily rectified, I just added it to my bowl and it also helped to bring the temperature down so I could eat it. Thank you for sharing the recipe I will be making it again.

    tmrc_emoticons.) tmrc_emoticons.)Good tasty thick soup. I only had 350g of broccoli, so I added 150g of dark green cabbage to make upto the 500g. Also used red onion instead of the spring onion. Will definitely be making this again as it was very quick and easy.
