Ingredients

100 g feta cheese

  • 200 g plain flour
  • 50 g parmesan
  • 1 teaspoon Italian herbs
  • 125 g butter chilled
  • 100 g Pesto
  • 12 cherry tomatoes, halved
  • 2 level tablespoon cold water

Recipe's preparation

  1. Preheat oven to 200C. Greece a 24-hole mini muffin tin.

  2. Process the flour, parmesan and herbs in thermoix for 20 seconds speed 5.. Add the butter and process 5 seconds spoeed 5 until the mixture forms fine crumbs. Add egg and watere and process 5 seconds speed 6 until mixture forms a pastry.

  3. Roll 2 tsp of pastry into balls, flatten and place in muffin tin.  Cook 10 mins until pastry is golden.

  4. Fill pastry shells with pesto and cheese then top with tomato. Bake for 10 mins until tomato softens. Serve on platter with basil to garnish

Tip

you can use any cheese. I used fetta but you could substitute with what ever cheese you like.

    it is a shame that they dont say the amount of eggs or water and that you have to make them into tartlets not round flat things but other wise they are wonderful
