Ingredients

Veggie Patties

  • 200 grams green peas
  • 200 grams Chickpeas
  • 200 grams corn kernel
  • 1 cup spinach
  • 1-2 tbsp turmeric
  • 1 tsp paprika
  • 1 tsp Pink Himalayan Salt
  • 1 tsp freshly ground pepper
  • 50 grams Cashews
  • 75 grams Quinoa flakes
  • 50 grams pine nuts
  • 2 clove garlic, peeled
  • 1 --- egg (whole)
  • 1 egg white

Recipe's preparation

    Preparation:
  1. 1. Pre-heat oven to 180-200C and line a baking tray with baking paper .

    2. PLace cashews into Thermomix bowl and mill 7 sec / 7 Speed. Set aside.

    3. Place garlic & pine nuts into bowl and mill 7 sec / 7 speed

    4. Add all the remaining ingredients into the bowl and blend 15 sec / 7 speed .

    5. Scrape down sides of bowl and repeat blending until combined & mixed well but not pureed.

    6. With oiled hands, shape small balls , then gently flaten to form dicks or patties .

    7. Place patties onto lined baking tray and bake for 10-12 minutes.

    8. Turn patties over and bake further 6-8 minutes or until firm to touch.

    9. Serve with sauce of choice.



    Variation:

    1.You may coat the patties with reserved milled cashews .

    2.You may opt to not flatten it into patties and simply coat it with reserved milled cashews to make veggie balls



    TIP:

    best served with chicken zaatar balls with zucchini & potato disks on a skewer

    Nice taste and good healthy meal with salad and relish. I made the mistake of not defrosting the peas and corn and the Thermomix struggled to blend the ingredients. I will make these again and defrost first. I made 16 patties so perhaps they were smaller than was intended. Thank you so much for the recipe.
