Ingredients
Dough
- 8 slices bacon
- 3 cloves garlic
- 235 grams Parmesan cheese, cubed
- 225 grams Butter
- 470 grams plain flour
- 1/2 teaspoon ground black pepper
- 1 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 20 grams chives chopped
- 240 grams heavy cream

Preheat oven to 180°
Place the bacon on a baking tray covered in foil and bake for ~20 until desired crispiness and crumble (leave oven on)
Remove the MC and place a jug on top of the Thermo lid and weigh the cream, set aside
Chop garlic 3 secs/speed 7
Add parmesan and grate 10 seconds/speed 10
Add the salt, flour, pepper, cayenne pepper, flour, butter, bacon and chives mix 5-20 secs/speed 5 until combined
Add half the cream and knead 1 min/"Closed lid" /"Dough mode" whilst continuously pouring in remaining cream (add additional cream if needed). Dough should be tacky but not wet.
Transfer the dough to the bench and roll into a log shape (flatten each side for a square biscuit)
Wrap the log in cling wrap and freeze on a flat surface for an hour
Using a sharp knife, cut ¼ inch thick slices
Arrange on a baking tray lined in baking paper and bake for 10-12 minutes until lightly browned
Cool on wire rack
Serve immediately or store in air tight container for up to a week

If you use already grated parmesan skip step 5 and just go straight to step 6

the quantity made two rolls & my slices looked like those little toasts you can buy. I ended up with 80 bickies. They spread when baking too, so second tray I spaced them apart by about 1/2".
Mine were a bit crumbly but quite tasty.
