Ingredients
- 300 g dried chickpeas
- 150 g cheddar cheese, cubed
- 1 teaspoon baking powder
- 2 tablespoons chia seeds, can substitute poppy or sesame seeds or a mixture of both
- 60 g olive oil
- 125 g chilled water

Preheat oven to 160° C.
Place chickpeas into mixing bowl and mill into flour for 1-2 min/speed 9. Remove flour and set aside.
Place cheese into bowl and grate 10 sec/speed 9.
Add 250 g of the chickpea flour, baking powder, chia seeds and olive oil to bowl. Mix for 10 sec/speed 6, or until dough forms.
Add 100 g of water and knead 10-20 sec/"Dough mode" . Add more water if required and knead again 10-20 sec/"Dough mode" .
Transfer dough onto a ThermoMat or bench top lightly floured with the remaining chickpea flour.
Divide the dough in half and wrap one portion in the ThermoMat or plastic wrap for use later. Roll out the other portion between 2 sheets of baking paper until approx. 2 mm thick.
Transfer rolled dough (still between baking paper) onto a baking tray and peel off the top layer of baking paper.
Roll out the reserved portion of dough and place on another baking tray.
Bake in the oven for 20-25 minutes, or until golden.
Allow to cool and crisp up on the baking trays, then break up roughly into crackers. Store in an airtight container for up to 1 week.
