Ingredients
Loaf
- 300 g pumpkin, cut into 1cm cubes
- 150 g dates
- 3 eggs
- 30 g coconut oil
- 2 tsp ground cinnamon
- 1/2 tsp ground ginger
- 200 g almond meal
- pumpkin seeds, To Garnish

Preheat your oven to 150 C fan forced or 170 C no fan.
Line a loaf tin with baking paper
Place Pumpkin into mixing bowl and chop 3 seconds, speed 7.
Put aside in a separate bowl
Without washing the bowl, add dates and chop 8 seconds, speed 7
Scrape down side of mixing bowl with spatula
Add reserved pumpkin, eggs,coconut oil, cinnamon and ginger to the dates. Mix 10 seconds, speed 4
Add Almond meal and mix 10 seconds, speed 4
Pour into loaf tin and sprinkle pumpkin seeds on top.
Bake for 1 hour or until cooked through.
Let it cool for 20 minutes before serving.
METHOD
Tip
If you don't have Almond Meal pre-prepared, you can blitz your own almonds and even leave them chunky

Very nice, I needed to cook mine for 1hr 20mins. I added shredded coconut, pepitas, goji berries and a sprinkle of coconut sugar on top before baking.
