- 65 grams almonds
- 65 grams Cashews
- 40 grams macadamia oil
- 4 eggs
- 125 grams walnuts
- 4 bananas
- 40 grams coconut oil
- 125 grams Coconut Flour
- 1 tablespoon cinnamon
- 1 tablespoon Nutmeg
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 pinch himalyan salt
- Walnuts for Decoration

PreHeat Oven to 180 degrees
Place almonds and cashews in bowl, blend for 20 seconds/speed 9. Scrape bowl down, blend 20 seconds/speed 9. Scrape bowl down, add macadamia oil, blend 15 seconds/speed 9.Repeat the blending process until nut butter has a smooth, "peanut butter" like consistency
(NB: TM will rev high, keep scraping down sides so all nut butter is at bottom of bowl)
Add 3 bananas, eggs & coconut oil to nut butter on 15 seconds/speed 8.
Scrape the bottom of the bowl to ensure all the nut butter is combined, add last banana walnuts and dates, blend 10 seconds/speed 4.
Add coconut flour, baking soda, cinnamon, nutmeg, salt & vanilla, mix on reverse on 15seconds/speed 4.
Line a deep loaf tin with baking paper & pour mixture into tin. Smooth batter into tin, and place some walnuts on top to batter for decoration.
Bake for 45mins to 60 minutes. Time dependant on oven. When tested with skewer, may not come out completely clean, as this banana bread is extremely moist.
Cut when cooled, ENJOY!
