Ingredients
Dough
- 2 medium sized apples, cored & quarted
- 120 g nut butter of choice
- 1 teaspoon vanilla essence
- 1 pinch salt
- 1 heaped teaspoon cinnamon, ground
- 4 eggs
- 400 g Almond meal or raw almonds
- 1 tablespoon apple cider vinegar
- 1 heaped teaspoon bicarb soda

If you're using whole almonds, mill them first and set aside.
Prepare a loaf tin by lining generously with baking paper.
Pre-heat oven to 170 degrees.
Chop apples finely, speed 6, 3 seconds.
Add the nut butter, vanilla, cinnamon and salt. Combine on reverse, speed 4, 3-5 seconds.
Add the eggs, combine on reverse, speed 4, 3-5 seconds.
Add the almond meal and mix to combine, reverse, speed 4, 10 seconds.
Add the vinegar and bicarb soda and mix through, reverse, speed 4, 3-5 seconds.
Pour the batter into your prepared tin and bake for 50 minutes. You may need to cover the loaf with foil for the final five minutes if it is getting too brown on top. Allow to cool for 10 minutes in the tin before gently moving to a cooling rack. Cool for a further 15 – 30 minutes prior to cutting.

I made this because i didnt have alot of ingredients at the time. Love the fact that only 4 eggs were required! it was moist.. couldnt really tast the apple but i think it would be delicious with some chopped walnuts or peacans.
