Ingredients
Vi's apple scone cake
- 350 grams plain flour
- 1 tablespoons baking powder
- 1 pinches salt
- 125 grams unsalted butter, diced
- 80 grams caster sugar
- 180 grams Milk
- 140 grams apple
- 60 grams sultanas
- extra milk to brush onto dough
- tablespoons Demerara sugar, or raw sugar for sprinkling on top of your scone

- Preheat oven to 200°C and line a baking tray with baking paper.
- Place flour, baking powder and salt in mixing bowl then mix 4 sec/speed 5.
- Add butter and caster sugar then mix 4 sec/speed 6.
- Add milk knead for 20 sec/knead.
- OPTION ... Single scone or Scone ring
**Single scone:Tip out dough onto a lightly-floured surface, lightly pat and roll out to about 4cm thick. Stamp out using an 8cm round cutter and place onto baking sheet. Gently gather remaining trimmings together , re-roll and stamp out more scones. brush with milk and sprinkle with raw or Demerara sugar. Bake for 14-17 mins. (Until slightly golden brown)
**Scone ring :Tip out dough onto a pre-prepared tray with baking paper, bring dough together into a ring leaving the inside hollow. brush with milk and sprinkle with raw or Demerara sugar.
Bake for 17-20 mins. (Until slightly golden brown) - Allow to completely cool on a rack.
Serve with whipped cream and jam.
Tip
these scone can be made the day before, they will keep fresh.
