Ricotta Cheese (Not my recipe - see tips below)
- 2000 grams full cream milk
- 100 grams white vinegar
'Cake'
- 80-90 grams Coconut Sugar or Caster Sugar
- 80 grams coconut cream
- 2 eggs
- 2 teaspoons Vanilla Bean Paste

Pre-heat oven 180deg
Ricotta:
Prepare a strainer with a muslin cloth over the top
Place Milk in Thermomix bowl 10min 100deg sp2
When the temp reaches 100deg you can stop the motor
Turn off heat and set to sp4 until the milk forms a whirlpool
Turn off again and immediately pour in the vinegar through the hole in the lid. Leave to rest for 2min the pour carefully into the strainer. Let it strain for 10-20min.
Cake:
Place ricotta cheese back into Thermomix bowl and add the 'cake' ingredients and combine 20sec sp4
Pour into lightly greased cake tin (I use loaf tin) and bake 40min or until slightly golden on top
Let the cake completely cool before decorating. You can dust the cake with icing sugar over the top and add berries or eat it plain. Nice served with a naughty double cream and berries, or even a fruit curd

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
