Ingredients
Doughnut Batter
- 2 ripe bananas, cut into thirds
- 4 eggs
- 60 grams coconut oil
- 80 grams Milk, use almond milk as a dairy free substitute
- 100 grams Maple syrup
- 60 grams Coconut Flour
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 80 grams chocolate chips, optional

- Preheat a fan forced oven to 200C.
Grease a donut pan with coconut oil (if needed, Thermomix rose gold donut trays do not need greasing), 12 mini or 6 large.
Place bananas into TM bowl and chop for 5 secs / speed 6.
Add all remaining ingredients, except for chocolate chips and combine for 15-20 secs / speed 5, until smooth.
Add chocolate chips and fold through mixture using the spatula.
Pour batter into the donut pan moulds. Tap tin on benchtop to even out batter.
Bake at 200C for 12-14 minutes - skewer test is clean.
Leave to cool in tin for 15 mins then transfer to a cooling rack.

Tip
If you don’t have a donut pan, you can make these as muffins.
Bake at 180 C for approx 15-20 mins for large muffins, 10 -12 mins for mini muffins (skewer test clean).

We weren’t fans of the texture of these donuts. (We have made coconut flour donuts before). They were very sweet without chocolate, but baked well 😀
