Ingredients

Banana Bread

  • 400 grams bananas, (approx 4 - very ripe)
  • 140 grams Salted butter, (softened & cut into 2cm cubes)
  • 100 grams caster sugar
  • 2 eggs
  • 2 teaspoons Vanilla Bean Paste, (or alternative - see tips)
  • 1 tablespoon honey, liquid
  • 250 grams plain flour
  • 2 teaspoon baking powder
  • 1 teaspoon bicarbonate of soda
  • 150 grams buttermilk, (just under 1/2 cup)

Recipe's preparation

    Banana Bread
  1. Prehead oven to 175°C (fan forced)
    Place a 1.5L silicone loaf form on a baking tray or grease a 1.5L loaf tin
    Add 400g ripe bananas to Closed lid"Closed lid"

    Mash 6 seconds, speed 6
    Scrape down the sides of the Closed lid"Closed lid"
    Add 140 grams butter and 100 grams castor sugar to Closed lid"Closed lid"
    Place TM Lid and MC onto Closed lid"Closed lid"
    Beat 15 seconds, speed 4
    Scrape down the sides of the Closed lid"Closed lid"
    Add 2 eggs, 2 teaspoons vanilla bean paste and 1 tablesppoon honey to Closed lid"Closed lid"
    Place TM Lid and MC onto Closed lid"Closed lid"
    Mix 10 seconds, speed 4
    Scrape down the sides of the Closed lid"Closed lid"
    Add 250 grams plain flour, 2 teaspoons baking powder, 1 teaspoon bicarbonate of soda, 150 grams buttermilk and to Closed lid"Closed lid"
    Place TM Lid and MC onto Closed lid"Closed lid"
    Mix 20 seconds, speed 4
    Pour batter into silicone loaf form or greased loaf tin and use a spatula to scrape out remining batter into the cookware
    Bake for 55 - 60 minutes or until a wooden skewer comes out of the cake clean.
    Allow to cool for 30 minutes then turn out onto a wire rack.
    Serve warm or allow to cool completely and store in an airtight container

Tip

Substitutions
You can substiutute the vanilla bean paste for either the seeds of 2 vanilla beans or 2 teaspoons of vanilla extract.
You can substitute the salted butter for unsalted butter and add a pinch of salt.
You can substitute the plain flour for bakers flour. I have done this several times and can't tell the difference.
To substitute the buttermilk warm 1/2 cup milk then add 1/2 tablespoon of lemon juice or vinegar, let stand for 5 minutes then stir well and use.
Normal milk is not a suitable subsitute as it is the acidity in the buttermilk (the lemon or vinegar added to the milk) that will activate the bicarbonate of soda.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
