Ingredients

Banana bread!

  • 4 over ripe bananas, in pieces
  • 60 gram vegetable oil
  • 75 gram brown sugar
  • 1 egg
  • 2 tsp vanilla essence
  • 1 tsp cinnamon powder
  • 200 gram wholemeal flour
  • 1 tsp Bi Carb
  • 1 tsp baking powder
  • 1 pinch salt

Recipe's preparation

    Method
  1. Preheat oven to 160C. Grease and line a small loaf tin.

    Add bananas, oil, sugar, egg, vanilla, and cinnamon to the bowl 5 seconds/speed 6.

    Add flour, bi carb, baking powder, and salt 20 seconds/speed 4.

    Pour into lined tin and bake for 50-60 mins until bread springs back. 

    Enjoy with or without slatherings of butter.

Tip

You can use regular flour if you don't have wholemeal. Any kind of oil or fat can be substituted for veg oil,

    I used gluten free flour, added coconut oil in place of vegetable oil, added a handful of chopped macadamia nuts and sprinkled coconut flakes on the top before baking. Half way through baking, I covered with bakig paper to prevent the coconut flakes from burning.

    I'm delighted with how it's come out. It's beautifully moist and quite delicious!

    Moist, tasty and delicious. I used overripe frozen bananas and chopped them for a few seconds before adding the other ingredients and added some shredded coconut on top.

    I only had 2 bananas, and added some chocolate chips. It was cooking quite quickly so I ended up taking it out after 40 minutes. It worked well despite the modifications. Much easier than my previous banana cake recipe.

    I am not sure what I did wrong with this recipe, but I made this tonight and cooked for a little longer than stated, however it came out un-cooked, very un-cooked. While the flavours were very nice, I had to try and slice and try and cook these.

    I want to try it again because the flavours were great, but am concerned this may happen again. If anyone has an idea why this may have happened, I would love some advice!
