Ingredients

  • melted butter or oil for greasing
  • 70 g walnuts
  • 125 g medjool dates, deseeded
  • 150 g Boiling water
  • 50 g Maple syrup
  • 1 tsp bicarb soda
  • 125 g light olive oil
  • 2 eggs
  • 2 ripe bananas, 200g when peeled, halved
  • 300 g organic white spelt flour
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 100 g brown sugar

Caramel Sauce

  • 400 g light coconut cream
  • 25 g Coconut sugar or brown sugar

Topping

  • 60 g walnuts
  • 60 g pecans
  • 3 medjool dates, deseeded and sliced into thin wedges

Recipe's preparation

    Method
  1. 1. Preheat oven to 160C. Grease and line a 23cm cake tine with baking paper and set aside.

    2. For the cake, place walnuts in mixing bowl and chop 10 sec/speed 4. Place in a small bowl and set aside.

    3. Place dates and boiling water in mixing bowl and chop 5 sec/speed 5. Scrape down sides of bowl with spatula. Add maple syrup and heat 2 mins/100C/speed 1.

    4. Add bicarb soda and mix 10 sec/speed 2. Add oil, eggs and bananas and chop 20 sec/speed 4. Scrape down sides of bowl with spatula.

    5. Add flour, baking powder, cinnamon, brown sugar and reserved walnuts and mix 30 sec/speed 4 or until combined. Pour mixture into prepared cake tin and bake for 60 minutes or until a skewer comes out clean. Remove cake from oven and allow to cool.

    6. Meanwhile, to make the caramel sauce, place light coconut cream and coconut sugar in clean mixing bowl. Heat 45 mins/100C/speed 3 until thick. Place in a jug and set aside until ready to serve.

     

    7. For the topping, place walnuts and pecans in mixing bowl and chop 5 sec/speed 4. Scatter chopped nuts over top of the cake and drizzle with caramel sauce.
