Ingredients

Muffins

  • 220 g rolled oats
  • 2 ripe bananas, halved, approx 220g
  • 60 g brown sugar
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 2 eggs
  • 250 g natural yoghurt
  • 30 g Shredded coconut
  • 90 g sultanas

Recipe's preparation

    Muffins
  1. Pre-heat oven to 200 degrees

     

    Add all ingredients except coconut and sultanas to the thermomix bowl.

     

    Mix 20 seconds, speed 6.

     

    Add coconut and sultanas and mix 10 seconds, speed 2, Counter-clockwise operation"Counter-clockwise operation" or until coconut and sultanas are incorporated into mixture.

     

    Pour into a greased muffin tray.

     

    Bake 20 mins or until golden brown.

    Love these. Soft, light and yummy. I omitted the sugar and added a dollop of honey instead - still quite sweet

    Nice ones! I reduced the sugar by half and still sweet enough! Will try some honey next time instead of the sugar.

    i preheated the oven and after 20 minutes it turned out very dark and was really done. Will reduce heat the next time. Interms of flavours my family liked them but stickedt to the muffin liners. Will give them another try again.

    Really lovely! Followed the recipe to a tee. They are so moist and tasty. I love that they aren't too sweet. The Santana's add a little burst of sweetness.

    These are a big hit in our house, and very convenient for breakfast. I used coconut yoghurt, deleted sultanas and added  dark chocolate chips. 220 calories each.

    Yummmmy! so moist and tasty, this recipe caught my eye as it's basically breakfast as a muffin, and low in sugar. I also played with the recipe by adding a large carrot and a small zucchini (approx 300g total blitzed firstly) and some chia seeds. Yummy guilt free snack and kid friendly, my 2 yo loves them!!

    These were yummy & healthy! I didn't add sultanas and replaced the natural yoghurt with Vaalia Vanilla & Blueberry yoghurt. tmrc_emoticons.)

    Liked these ones. Didn't add sultanas. Quite dense but filling and healthy tasting.
