Ingredients
- 250 g medjool dates, soaked in water for 20 minutes
- 100 g almonds
- 150 g macadamia nuts
- 60 g coconut oil
- 1/2 vanilla bean, Cut into 4 pieces
- 70 g dessicated coconut
- 1 pinch sea salt
- 100 g water
- 30 g Maple syrup
- 60 g raw cacao powder

Place almonds and macadamia nuts into bowl. Add half of the soaked dates, squeezing out the excess water. Chop/mix for 15 seconds on speed 6. The mixture should be slightly chunky.
Press mixture into your prepared tray and set aside.
Add vanilla bean to bowl and pulverise on speed 8 for 3-5 seconds. Scrape down bowl if needed. Add 30g coconut oil to bowl and melt gently for 6 minutes at 37 degrees on speed 1. Add remaining dates (excess water squeezed out), dessicated coconut, salt and 50g water. Blend until smooth, increasing slowly to speed 9 for 20 seconds.
Add this gooey layer to your base pressing firmly down. Place in the freezer while you prepare the chocolate layer. Rinse bowl.
Add 30g of coconut oil, cacao powder and maple syrup to the bowl and mix gently for 10 minutes at 37 degrees on speed 1. Mix gently for another 4 minutes at 37 degrees on speed 1, adding 50g of water (half of MC) through the lid a little bit at a time until smooth. Mix for 10 seconds on speed 4.
Take slice out of freezer and spoon chocolate mixture on top. Return slice to freezer for at least an hour before slicing into squares.

Tip
This reminds me soooo much of a cherry ripe bar....minus the cherries!! It's the coconuty chocolately goodness....mmm....I think there may be a new variation coming soon! Stay tuned.
