- 250 gram carrot, roughly chopped
- 100 gram rolled oats
- 200 gram plain flour
- 50 gram Rapadura Sugar
- 2 teaspoons baking powder
- 4 eggs
- 1 teaspoon Vanilla Paste
- 50 gram honey, optional
- 120 gram olive oil, light taste
- 70 gram fresh blueberries, whole

Prepare medium sized muffin trays to fit 18 Muffins with Muffincups
preheat oven to 180 degrees
Add the carrots to Mixing bowl 3 sec speed 7
scrape down sides of Mixing bowl (add 1 sec if necessary)
Add all other ingredients besides Blueberries and mix
15 sec speed 4
scrape down sides of Mixing bowl
5 sec speed 4 if necessary
Add Blueberries to mixture and
mix10 sec reverse"Counter-clockwise operation" speed 3
Devide Mixture evenly in Muffincups and bake for
20min at 180 degrees or
until golden and a skewer inserted comes out clean
Easy Carrot muffins the kids will love....
Tip
instead of sugar and honey add just some maple syrup
