Ingredients
FILLING
- 180 grams Butter
- 1 teaspoon vanilla essence
- 80 grams Shredded Cocnut
- 3 Weetbix( broken in halves)
- 130 grams plain flour
- 1 teaspoon baking powder
- 50 grams caster sugar
- 30 grams cocoa powder
ICING
- 150 gram icing sugar
- 30 gram cocoa powder
- 25 grams Butter
- 2-4 tablespoon water, (add more water to thin if needed or icing sugar to thicken)

Preheat oven to 180 degrees
Combine butter and vanilla essence in Thermomix jug
Melt butter 2.5 minutes, 50 degrees on speed 2
Add in Shredded coconut, weetbix, plain flour, baking powder, sugar and cocoa, mix them all together on speed 3, 45 seconds
Put mix in a lined slice/laminton tray, pressed down firmly and as evenly possible with the back of the spoon, smoothing out as you go.
Place in oven for 20 minutes or until firm. ALLOW TO REST and cool down.
ICING
Place cocoa and icing sugar into clean dry thermomix bowl
add the hot water and softened butter to the bowl
heat on 1 minute, 50 degrees speed 2 or until you receive a smooth consistency. Pour icing onto filling and smooth out
Sprinkle a little extra coconut on top (shredded or dessicated)
VOILA - DELICIOUS
Tip
If you want to use your own icing sugar made from raw sugar I suggest making it arounf 100 gms or according to your taste. Store bought icing sugar seems to be lighter than homemade raw icing sugar.
