Ingredients
Dulce de Leche/Caramel thumb-print cookies
- 225 g Butter, room temp, chopped
- 135 g sugar
- dash vanilla extract
- 1 egg yolk
- 325 g plain flour
- pinch salt
- 1 can Dulce de leche, homemade, or Nestle Top 'N' Fill, you'll probably only need 1/2 can

- 1 can sweetened condensed milk

- Preheat the oven to 180, regular oven.
Grease and line 2 oven trays.
Cream the butter and the sugar 20secs/sp4. Scrape and repeat for 40 secs.
Add egg yolk, vanilla and flour 30secs/sp4. Scrape and repeat for 40secs, or until a soft dough forms.
Roll dough into walnut sized balls, flatten slightly with the back of the MC and a square of baking paper. See photo.
Press a thumb sized indentation into each cookie tip:
using the back of a rounded measuring spoon works best for this.
Fill a piping bag with the caramel, using a suitable size nozzle.
Bake for around 12-14 mins until just golden.
Carefully remove the trays from the oven and gently redefine each indentation where necessary, using the spoon again.
Pipe enough caramel into each indentation to fill.
Bake again for 8-10 minutes, or until cookies are lightly golden and the caramel has set.
It will harden further on standing.
Cool on wire racks. - Simply fill your TM5 bowl to 2 litres with water.
Position the Varoma bottom onto the lid.
Place up to 4 cans of Sweetened condensed milk (labels removed), ring pull up, into the Varoma bottom. You can of course only do 1 can, if you like. I do extra as I like to have them on hand.
You will only need one prepared can for this recipe.
Cover with the lid Cook at Varoma, 90 minutes.
Be careful removing the sealed can/s, after cooking. They will be be hot.
Cool to room temperature before attempting to open them.
Store in the pantry when cool.
