Ingredients

Topping

  • 50 g unsalted butter, cut into cubes
  • 80 g brown sugar
  • 6 feijoas, peeled and sliced
  • 1/2 lemon, juice only

Cake batter

  • 110 g raw sugar
  • 50 g Butter
  • 1 egg
  • 10 g Lemon juice or vinegar
  • 180 g golden syrup
  • 230 g plain flour
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1 tsp baking soda
  • 130 g Milk

Recipe's preparation

    Topping
  1. Preheat oven to 170C.  Grease and line a 24cm spring form cake tin with baking paper.

  2. Place all topping ingredients into mixing bowl and cook 4 min/70C/speed 2.5

  3. Pour topping mixture into prepared cake tin.   Clean and dry mixing bowl.

  4. Arrange the feijoa pieces in an overlapping circular pattern on top of the topping in the cake tin.  Set aside.

  6. Place sugar into mixing bowl and mill 10 sec/speed 9.

  7. Add butter and melt 2 min/60C/speed 4.

  8. Add egg, lemon juice and golden syrup and combine 30 sec/60C/speed 3.

  9. Add all remaining ingredients and combine 10 sec/speed 4.

  10. Carefully pour cake mixture into cake tin over the topping and bake for 30 min or until springy to the touch.  Remove the cake from the oven and allow to cool. 

  11. Before turning the cake out onto a serving place run a knife around the edge to release.  Place a large serving plate over the top of the cake.  Gripping the tin and plate together, flip over and place the cake plate side down.  Carefully release the spring form tin and remove baking paper.

    This cake is amazing! So easy to make and so light and moist. Only made this morning and there's less than half left...perhaps I need to hide the rest from my fam!
