Recipe's preparation

  1. 1. Add all ingredients into the mixing bowl. I use mostly apple, cored and cut into rough quarters.
  2. 2. Cook fruit for around 8 mins, 100 degrees, speed 1, (simmering basket on top) or until fruit is mostly soft. Time may vary depending on your fruit of choice
  3. 3. Puree fruit 40 sec, gradually increasing speed from 4 to 9. Scrape sides and repeat if any chunks remain. Mix needs to be smooth.
  4. 4. Spread puree into a thin layer - I use dehydrator trays lined with baking paper and this mix does 5 trays (approx 25cm x 40cm). The thinner you spread the puree, the faster it will dry. I use the dehydrator at 70 degrees c, for approx 4-5 hours. Check by gently touching the mix on trays, should feel dry and not stick to finger.

Tip

The thinner and more evenly you are able to spread the puree, the faster it will dry. I have found the plastic bowl scraper/dough cutter from TheMixShop very useful for this.

I have used free apples and blackberries from my neighbours, but you could try almost any fruit combination. I fill the TM bowl to just below the max line with uncooked fruit. I would suggest less if you're using small fruit like blueberries.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
