Gingernuts
- 300 grams raw sugar
- 110 grams Butter (Softened)
- 2 teaspoons ginger
- 1 teaspoon baking soda
- Boiling water, Small amount, enough to dissolve ginger and baking soda
- 160 grams Golden Syryp
- 290 grams Self Raising Flour

PREHEAT OVEN TO 180 degrees.
Add sugar and softened butter to thermomix bowl.
Mix speed 5 for 10 seconds.
In a coffee mug combine ginger, baking soda and dissolve with a small amount of water. Add mixture to Thermomix bowl with sugar/butter mixture.
Add Golden syrup to bowl and mix speed 5 for 5 seconds.
Add S/R flour and mix speed 5 for 10 seconds. Scrape down sides of bowl and mix for a further 10 seconds on speed 5.
(this may need to be done another time until all ingridients are combined)Turn out dough onto thermomat or slightly floured clean and dry bench.
Roll into a ball and separate into 2 pieces using the spatula.Place onto baking tray lined with baking paper and flatten with a floured fork , leave room as they will spread as they cook.

Really yummy. I think next time I will put double the ginger! Easy and Brilliant for the kids.
Gaffer
These were really tasty, though I did find I had to turn the oven down to stop the bottoms from burning. Mine cracked a lot more than the picture, but they were yummy just the same.
The kids loved these and said they're just like the real thing!
