Ingredients

  • 135 grams dried cranberries
  • 150 grams Dried currants
  • 375 grams Self Raising Flour
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp ground nutmeg
  • 2 tsp ground cinnamon
  • 165 grams sunflower oil
  • 250 grams buttermilk
  • 200 grams caster sugar
  • 2 eggs

ICING

  • 2 tbsp caster sugar
  • 2 tbsp Boiling water
  • 80 grams icing sugar
  • 1-2 tsp lemon juice

Recipe's preparation

    MUFFINS
  1. Preheat oven to 200'C

    Line a 12-hole muffin tray with paper cases

    Weigh dried fruit into a bowl and soak in just enough boiling water to cover for 10 minutes. Drain well.

    Combine flour, soda and spices into mixing bowl and "sift" turbo, 1 second, 3 times. Set aside.

    Combine oil, buttermilk, eggs and caster sugar into mixing bowl and mix, 5 seconds, speed 5.

    Add dry ingredients to mixing bowl and combine with wet ingredients, 5 seconds, speed 5.

    Add fruit and mix gently, Counter-clockwise operation"Counter-clockwise operation" 5 seconds, speed 2.

    Divide misture among muffin cases and bake for 20-25 minutes until lightly browned and a skewer inserted into the centre comes out clean.

    Cool completely on a wire rack.

  5. Combine Caster Sugar with boiling water and stir until sugar dissolves. Brush the glaze over muffins.

     

    Combine Icing Sugar with lemon juice to make a thick, pipable icing. Use a piping bag or drizzle from a spoon to draw a cross on each muffin.

Tip

Makes 12 Large Muffins.

These are an easy alternative to hot cross buns, aromatic with sweet bun spices and decorated with a quick cross made of drizzled icing.

Cranberries are not at all conventional, of course, but they do add little bursts of flavour. You can use whatever combination of dried fruit you prefer.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
