- 100 grams macadamias
- 250 grams Butter or Nuttelex
- 60 grams icing sugar
- 180 grams plain flour
- 60 grams cornflour

- Place the lemon rind and macadamias in the bowl and chop for about 5 seconds, speed 6. You may want to go a bit longer until a "crushed nuts" consistency is achieved. Remove from the bowl, do not clean it.
Place the butterfly in the bowl and add the softened butter or Nuttelex and the icing sugar. Cream speed 4 for 10 seconds. Scrape bowl and cream again speed 4 or 10 seconds. Scrape down the bowl.
Add the flours and mix speed 4 for 10 seconds. Scrape the bowl and add the lemon and macadamia mixture. Mix again speed 4 for 10 seconds.
Refrigerate the mixture for at least 1 hour.
Roll teaspoonfuls of mixture in to balls ond place on a lined tray. Press the top down gently with a wet fork. Bake for 12 to 15 minutes in a 180 °C oven. Cool on a wire rack and sandwich together with lemon or vanilla buttercream icing.
Tip
I've made these with Nuttelex for my friend who is vegan and they turn out beautifully. I also make the icing with nuttelex.

Delicious. Simple to make. We just ate them as singles - without any cream to join them. Perfect with a cuppa. We have both macadamia and lemon tree so perfect combination to use up fruit of both. Lemon not too strong. Very easy to make.
