Pikelets
- 1 lemon rind, #see notes. **reserve lemon for juice
- 40 g almonds
- 80 g wholemeal flour
- 40 g Butter
- 100 g Milk
- 30 g Rapadura Sugar
- 2 eggs
- juice of 1/2 - 1 small lemon
- 1 tbsp baking powder
- 1 tbsp poppy seeds
- 1 pinch salt
Frying
- oil or butter

I'm cooking this todayRecipe's preparation
1. Add lemon rind, almonds and flour to TM and mill - 30 secs/speed 10
2. Add remaining pikelet ingredients and mix - 10 secs/speed 5
3. Place spoonfuls of batter on a hot pan and fry in a little butter or oil until golden brown on both sides
4. Enjoy with a berry compote, fresh fruit, icecream etc

Tip
#Use a potato peeler to remove rind from your lemons. Place any extra peeled rind in a snap-lock bag and place in freezer until you require it. Blitzing always works best when you combine the rind with flour, sugar, nuts etc... Getting into this habit whenever you use citrus fruits means you'll always have zest handy for recipes!
