- 1 apple cored peeled, grated in tmx set aside
- 40g caster sugar - or blitz your own
- 1tsp Vanilla Essence/Extract
mulberrys
- 200g Mulberries
- 75g butter chilled cubes
- 140g Self Raising Flour
- 50g raw sugar
- 1tsp Vanilla Essence/Extract

put all into jug and mix 5 sec/speed 5 set aside and put into fridge while you prepare cake
beat butter and sugar and vanilla 2mins/speed 5 ,add eggs beat 1min speed 5 you may have to scrape down.add vanilla and flour and milk and beat for 20secs till combined.i added apple and just stir through with spatula then put into a 20cm tin that has been lined and greased
top with the mulberries and sprinkle crumble on top then cook in medium oven for 1hour it comes away from side tin when ready

This was absolutely delicious! Followed some other users suggestions and added about 1/4 cup both oats and shredded coconut to the crumble. Cooked for 50mins in a 21cm spring form tin. Absolutely beautiful!
I added some oats and coconut and a bit more butter to the crumble and it made a lot. I used the rose gold 20cm cake tin but think I might have had more success with a larger tin. The crumb was a bit too crumbly and the cake quite dense.
lovely cake, used Loquats instead of the apple and Mulberry's both from my garden.
Crumble was very crumbly, might add oats/coconut to the topping next time.
Used spelt flour and coconut sugar in the cake/crumble.
Wow, tumbled in the mulberries I picked -around 300g, added left over CADA to the crumble, and leftover apple sauce to the cake - what a hit!
I have put this in a 6 cup muffin tray for individual servings. Used 150g of frozen blueberries. Had some crumble topping left over so will freeze this for another time/recipe. Thanks for a great idea!
