- 85 g Baker's Flour
- pinch dried yeast
- 75 g water
Dough
- All of the starter, above
- 330 g Baker's Flour
- 1 tsp bread improver
- 70 g sugar
- 1 level tablespoons dried yeast
- 1 tsp brewing sugar, optional
- 60 g lukewarm water
- 2 large eggs
- 60 g unsalted butter
- 5 drops Orange Oil **see notes below**, optional
- 1.5 tsp salt
Add ins
- 65 g Apricots
- 70 g Dried Pineapple, chopped
- 85 g sultanas
- 45 g dried cranberries
- 45 g dried cherries, chopped
- Zest of 1 orange

- Combine ingredients in a bowl. I find a chopstick works well.
Leave to stand overnight. - Add all the ingredients in the order listed.
Combine sp7/10secs.
Knead 3mins. and set aside in a silicone mat or greased bowl to rise until double.
Punch down and knead in the add-ins by hand. Use a little extra flour if necessary. The mixture will be a little sticky.
Place into a greased high sided tin to double in size, covered.
Bake 200°C for 10 mins, 190°C for 10 mins, then 180°C for 25-35 mins, or until cooked when tested. Internal temp. reads 90°C.
Watch ot that it doesn't burn. Cover with foil during the last bake if necessary.
Cool on a wire rack.

** Use flavoured oils at your own discretion. There are several cases in the USA against Doterra etc, suggesting that flavoured/essential/pure oils can be toxic in some cases**
This is a delightful alternative to the traditional Christmas cake we usually serve in Australia.
It's a bit like a cross between a cake and bread and not overly sweet.
Keeps well wrapped tightly in foil, or frozen.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Absolutely gorgeous. My family were very impressed when I presented this on Boxing Day. I did not have any dough improver so I left it out and it was fine. Had a piece toasted for breakfast this morning. Amazing!!!
