Ingredients

Brownie base (Cheat's version):

  • 1 package choc brownie mix, (Ive used Aldi and Coles brands. Both are good)Alternatively,don't cheat and make your own' disregarding the remaining ingredients below.
  • 60 g oil
  • 2 eggs
  • 1 tsp Peppermint Essence

Cheesecake top

  • 250g package cream cheese, softened and chopped
  • 100 g sugar
  • 1 egg
  • dash vanilla extract

Recipe's preparation

    How to: Base
  1. Preheat the oven to 170°C/FF
    Grease and line a 20cm square cake pan.
    Or just grease a 20cm square silicone pan.

    1. Combine the package of Brownie mix with oil, eggs and peppermint essence 15-20secs/sp4, or until combined.

    2. Spread evenly into the pan.
  2. Topping
  3. 1. Combine all the ingredients, 30secs/sp3.4, until smooth and creamy.
  4. Assembly:
  5. 1. Spread/pour the cheesecake topping over the top of the unbaked base. Using a skewer or fork, lightly swirl the 2 mixtures together.
    Or just dollop the mixture on top.

    2. Bake for 30-35minutes, or until cooked when tested.
    It's Ok if it's a tiny bit wobbly when you remove it from the oven.

Tip

Oohey gooey peppermint goodness in every bite!!
Freezes well.
