- 80 grams Milk
- 80 grams white sugar
- 50 grams Butter
- 4 egg yolks
- 300 grams plain flour

- 2 level teaspoons bread improver
Portuguese custard filling
- 500 grams Milk
- 50 grams flour
- 250 grams sugar
- 10 grams cornflour
- 1 egg
- 5 egg yolks

- Add milk and yeast to TM bowl. Mix 2 min/37 degrees/speed 1
Add flour and mix for 15 seconds/speed 3.
Remove from TM bowl and let sit in a warm place for 40 minutes or until its doubled in size and little bubbles have appeared. - Add the milk, sugar and butter and heat for 2 min/37 degrees/speed 2
Add the egg yolks and mix 15 seconds/speed 3
Add the dough starter, flour, bread improver and salt and knead 3 minutes.
Let the dough prove in the TM bowl for at least 40 minutes or until its doubled in size.
With the help of your spatula, press down the dough and knead for a further 1 minute.
Roll out dough on a lightly floured bench or on your thermomat to around 1cm thinknicess.
Cut donuts into approximately 7cm in diameter circles, place on a lightly floured tray and let rise again until its almost trippled in size.
Pre-heat your deep fryer to 150 degrees and fry your donuts until golden.
Dust cooked donuts in caster sugar while they are still hot.
Let them cool. - Add all the ingredients to the TM bowl and cook for 11 minutes/90 degrees/speed 4.
- Once the donuts have cooled, fill with custard.

These have turned out perfect. I was worried the custard wouldn't be thick enough, but I could hear it thickening in the last few mins in the thermo. Tastes delish - would definately make again. I added a little vanilla to the custard
