Ingredients
Pumpkin & Date Scones
- 150 g medjool dates, pitted
- 250 g plain flour
- 200 g wholemeal flour
- 2 teaspoons baking powder
- 1/2 teaspoon bicarb soda
- 40 g rapadura or brown sugar
- 1/2 teaspoons sea salt
- 120 g Butter, chilled, cut into small pieces
- 150 g cooled mashed pumpkin
- 2 teaspoons apple cider vinegar
- 100 g buttermilk, natural yoghurt or milk kefir
- 100 g full cream milk

1.Preheat oven to 180C fan-forced.
2.Place dates in mixing bowl and chop 3 sec/speed 6. Transfer into bowl and set aside.
3.Place flours, baking powder, bicarb soda, sugar and salt in mixing bowl and mix 10 sec/speed 6.
4.Add butter and Turbo 1 sec x 3 until mixture resembles fine breadcrumbs. Scrape down sides of bowl with spatula.
5.Add mashed pumpkin, apple cider vinegar, buttermilk, milk and reserved dates and mix 10 sec/speed 5, or until mixture comes together.
6.Transfer mixture onto a well-floured surface or Thermomat and bring mixture together to form a round disc approx. 3cm high.
7.Cut out 14 scones with a 4cm scone cutter, dipping your cutter in flour as you go. Transfer the scones onto the baking tray, placing so they just touch each other. This will help them rise. Bake for 20 - 25 minutes or until golden. Serve warm with butter, or just as they are.

Substitute 100g raisins for fresh dates
Substitiute 100g dried dates (soaked in hot water for 10 minutes then drained) for fresh dates

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Just made these and yummy! I had to add an extra 50g or therebouts of flour as it was very sticky and I only had 100g pumpkin so used 50g potato mash as well. I used yogurt instead of buttermilk as that is what I had. I'l definitely make these again, they were delicious. Thank you
