Ingredients
Salted Caramel
- 80 g Butter
- 130 g thickened cream
- 50 g brown sugar
- 50 g caster sugar
- 50 g golden syrup
- 1 teaspoon vanilla extract
- 1 teaspoon sea salt
Vanilla Puddings
- 60 g raw sugar
- 130 g Butter
- 170 g Self Raising Flour
- 1 egg
- 2 egg yolks
- 180 g Milk

Weigh all of salted caramel ingredients into bowl
Cook on speed 3/varoma/10 minutes
Remove salted caramel to a heatproof jar to cool slightly - around 15 minutes. Wash and dry TM bowl thoroughly
Add 4 teaspoons of salted caramel to each of 12 silicon cupcake moulds or greased ramekins
Commence pudding mixture by milling sugar for 10 seconds/speed 10
Add butter and mix for 8 seconds/speed 7
Add egg, egg yolks, flour and milk and mix for 8 seconds/speed 5
Divide batter into the 12 silicon moulds or ramekins containing the caramel and place into varoma bowl and tray. Rinse TM bowl and add 1L of water
Set varoma into position and steam puddings for 20 minutes/varoma/speed 2
Allow puddings to cool slightly, before inverting onto dessert plates and serve with double cream or vanilla ice cream
Tip
you will need 12 silicon cupcake moulds or small heatproof ramekins for this recipe

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Absolutely delicious!! I made a few tweaks using coconut cream in place of cream and milk (no cream in house and I needed to use rest of can). I also just blitzed all pudding ingredients on speed 5 for 20s because I'm slack. I also put it into a single silicon pan which took about 40 minutes. Awesome recipes thanks
