Ingredients

Strawberries and cream tray cake

  • 1 lemon, rind only
  • 180g sugar
  • 250g plain flour
  • 1.5t baking powder
  • 1/2t bicarbonate of soda
  • 1/2t salt
  • 3 eggs
  • 120g oil, not olive oil
  • 1t vanilla extract
  • 200g yoghurt
  • 1 package Cottees Vanilla pudding mix, see photo
  • 250g package Fresh strawberries, washed, hulled and diced. You can save a few to place on top of the icing if you like.

Glaze

  • 250 g icing sugar
  • 1 tsp Queen brand "Straw'bry & cream" essence, see photo
  • cream, between 120-160g. App 6-8 tblspns, enough to make a glaze type consistency
  • drops Pink Colouring, optional

Recipe's preparation

    How to:
  1. Preheat the oven to 180c.

    Grease and line a large lamington size pan. Mine measures app. 34cm x 24cm.

    1. Add sugar and lemon rind to the Closed lid"Closed lid" . Blitz sp 9/10secs.

    2. Add remaining ingredients except for the strawberries.

    3. Blend sp 30secs/sp5 secs. Scrape if necessary.

    4. Fold in diced strawberries using the spatula.

    5. Spread into prepared pan.

    6. Bake for 40-45 minutes, or until cooked when tested.

    7. Leave to cool in the tray before icing with the glaze.

  3. 1. Add icing sugar and essence to the Closed lid"Closed lid"

    2. Add enough of the cream to make a thin glaze or thick frosting, through the MC hole, sp 4.

    3. Add a few drops of pink food colour if you like.

Tip

Absolutely delicious..

You could substitute the Strawberry essence for strawberry topping. Or just use lemon juice instead if you prefer.

    This cake was extremely pleasant and moist, but mine got rather dark and cooked in 50 minutes. I used 180 degrees fan forced, but had to lower it to 175.

    Should this be cooked at 180 Conventional or 180 Fan Forced? Next time I will use my largest loaf pan as it rose extremely high and I feel there was too much mixture for my pan.
    I will certainly be trying this again as it was very pleasant.
