- 250 g unsalted butter, at toon temp
- 200 g caster sugar
- 250 g Self Raising Flour
- 2 tsp baking powder, to make them extra light
- 2 tsp vanilla extract
- 4 eggs
- 100 g Milk

I'm cooking this todayRecipe's preparation
- Pre-heat the oven to 170 degrees.
Line muffin trays with patty cases.
Place all ingredients in the TM bowl and mix on speed 5-6 for 40 seconds.
Fill the patty cases until 2/3s full.
Bake for 17-20 mins.
Can ice with any icing - I removed the Fruity Icing as the proportions were out.

I have no idea what went wrong for me... I've never made such a bad batch of anything. I am assuming the issue is with me or my scales 😂
I've made this cupcake recipe at least a dozen times now over the last six months, these are my go to vanilla cupcake recipe. I've tried several others, but they just don't stack up against this one. And I always get at least 18 cupcakes out of this recipe. They freeze perfectly too. Thanks for the share
