Cookies
- 100 g Butter, Softened
- 85 g crunchy peanut butter
- 45 g Demerara sugar
- 45 g caster sugar
- 1 egg, Room Temperature
- 85 g plain flour
- 1/2 teaspoon bicarbonate of soda
- 1/2 teaspoon baking powder
- 50 g White Chocolate Chips

Preheat oven to 180C/160C fan forced. Line a baking tray with baking paper.
Place butter, peanut butter and sugars in tmx bowl and beat on speed 5 for 30 seconds. Scrape sides of bowl and repeat for another 30 seconds.
Scrape down sides of bowl and add egg and mix for 30 seconds on speed 5.
Scrape down sides of bowl and add flour, baking powder, bicarbonate of soda and chocolate chips and mix "Counter-clockwise operation" speed 5 for 15 seconds.
Using a dessert spoon, place 10 spoonfuls of dough onto prepared tray, about 3cm apart. Bake for 10-12 minutes, until just firm to touch. Remove from oven and cool on tray (cookies will firm). Serve.

Uncooked dough can be frozen for up to 3 momths. Shape into a log and wrap in baking paper and plastic wrap. To cook stand at room temperature for 5 minutes. Shape into 10 rounds, place on a baking tray and bake as per recipe.
