Ingredients
Zucchini "Bread"
- 550g flour, of your choice (I used spelt)
- 1ts salt
- 1ts bicarb soda
- 1ts baking powder
- 3ts ground cinnamon
- 3 eggs
- 200g macadamia oil
- 350g sugar
- 3tsp vanilla extract
- 350g zucchini, cut into 1/3's
- 120g craisins (dried cranberries)
- 150g choc chips, (or chop block chocolate in the TM)

This will actually make 2 loaves, in regular loaf tins, so grease & line 2 tins, preheat the oven to 165 degrees.
Make your sugar into caster sugar by placing into the bowl & mixing for 5 secs speed 10. place to the side for later. Place all the other dry ingredients into the bowl & "sift" for 5 secs speeed 5. place to one side. Add zucchini to the TM bowl & add all remaining wet ingredients & the sugar, mix for 5 secs speed 5. Add the sifted ingredients to the wet ingredients in the TM bowl & mix for 5 dec speed 4 scrape down the sides of the bowl & add the craisins & choc chips. Mix for 5 secs"Counter-clockwise operation" speed 4, repeat again if need be after scraping down the bowl. Divide mixture into prepared tins & bake for 40 - 60 mins or until cooked.

I found the instructions a little confusing. Only used 200 g of sugar and possible could use less. Had to use a variety of oils as I hadnt enough, used macadamia, grape seed and olive. Used raisins and sultanas instead. But only made one large loaf so baked for about1 hour and 20 minute. Smells delicious. Tastes very nice.
Yum. I used sultanas, 300g sugar and 180g of rice bran oil with spelt. A good use of zucchini. I also did sugar first, then moved onto wet ingredients, and sifted the dry ingredients into the bowl,
