Yoghurt

  • 120 g Yoghurt starter, I use 5am vanilla yoghurt
  • 1750 g UHT milk
  • 175 g milk powder
  • 100 g caster sugar

Fermenting water

  • 250 g water
  • 30 g lemon juice

Recipe's preparation

  1. Place 1750 g UHT full cream milk into mixing bowl and heat 5 min/45°C/speed 3, without measuring cup.
  2. Add 120 g yoghurt starter, 175 g full cream milk powder and 100 g caster sugar into mixing bowl, then mix 25 sec/speed 4. Pour into a thermal serving bowl or other large bowl that fits comfortably in your Varoma (max. size 2L- the white Thermoserver is perfect), seal with lid, then place into Varoma dish. Rinse mixing bowl.
  3. Gentle stir setting"Gentle stir setting" Place 250 g water and 30 g lemon juice into mixing bowl. Place Varoma dish with thermal serving bowl into position, secure Varoma lid and start Fermentation /10 h/70°C.
  4. Remove Varoma, then place thermal serving bowl with yoghurt into refrigerator for a minimum of 4 hours or until completely chilled.

Tip

This recipe is only suitable for the Tm6. Sugar can be adjusted to desired tastes. For a natural yoghurt omit sugar and use an appropriate starter like Jalna potset greek yoghurt.
UHT milk is used as it is already heat treated and the process of heating the milk to 80c and waiting for it to cool until 45c is not needed. If using fresh milk you will need to add this step back in.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
