Ingredients

Dough

  • 230 g water
  • 60 g Butter, cubed
  • 180 g flour oo
  • 170 g wholemeal flour
  • 15 g sugar raw
  • 30 g powdered milk
  • 1.25 teaspoon salt
  • 10 g Instant dry yeast

Toppings

  • 30 g Cheddar cheese
  • 20 g Parmesan cheese
  • 20 g mozarella
  • 1 chilli, medium, seeds removed
  • 2-3 spring onions, roughly chopped

Recipe's preparation

  1. Put water in bowl and heat for 3min, 37C, speed 1.

  2. Add yeast, sugar, salt, flours, powdered milk and butter to the bowl. Mix for 5 seconds, speed 7, to combine. Turn dial to closed lid position and knead for 2 min on dough setting. Turn out onto silicon mat, or floured surface and gently pat into a ball. Place in a large, lightly oiled bowl, cover with oiled cling film and place in a warm place for 1.5 – 2 hrs to rise.

  3. While the dough is rising, prepare the toppings: place cheddar cheese in bowl and grate on speed 6 for 5 seconds. Set aside. Repeat for other cheeses and set aside. Place chilli and onion into bowl and chop, speed 6 for 10 seconds, set aside. Keep a small amount of parmesan separate for the final topping on the loaf.

  4. After the dough has risen, preheat oven to 180C. Oil and line a loaf pan with baking paper. Coat your hands well with oil.


    Gently remove dough from bowl, gently kneading to remove air and forming a ball. Divide the dough into two and repeat several times until you have two small (around 2cm) size balls. Keep repeating for form many small balls (don’t worry too much about rolling them or about having exactly the same size, rough is fine). Cover the bottom of the loaf pan with a layer of small dough balls. Sprinkle half the cheeses & chilli/onion mixture on top. Repeat with another layer of balls and topping mixture, finishing with a final layer of dough balls on top and sprinkling with remaining parmesan cheese.

  5. Bake in oven for 20-30min. Carefully turn out onto a board and serve hot or warm.
