  • 375 g bakers (bread) flour
  • 45 g honey
  • 30 g Butter (at room temperature)
  • 115 g rolled oats (not instant)
  • 5 g salt

Recipe's preparation

  1. Place wheat and rye kernels in the TM and process for 2 minutes at speed 10.  Set aside.

    To make sponge, place warm water in the bowl of your TM and sprinkle in yeast (you can pulse it for a couple of seconds to mix it together). Add bakers flour and mix for 20 seconds at speed 3.5. Scrape down the sides, cover and let rest (in TM) until doubled in size (about 20 minutes).

    To complete the dough, knead down the sponge for 3 seconds then add the remaining ingredients (don’t forget the processed kernels you set aside earlier), and knead for 2 minutes. Dump dough onto your Thermomix mat (or any hard surface) that was dusted with flour and knead by hand for an additional 2 minutes (add more flour if the dough is too wet). Shape into a loaf (like a short shoe box with rounded corners), place on a baking paper lined baking tray, cover with a piece of cling wrap that is lightly coated with oil, and let rise until doubled in size.  Remove the cover and place your bread into a preheated over (190 c) with a pan of hot water under it (for steam).  Bake for 50 to 60 minutes (the bread is done when it sounds hollow when tapped on the bottom).  Allow to cool slightly before cutting.

Tip

This country loaf is crunchy and very satisfying. Also works well as a dinner roll.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     This bread is quite tasty. My hubby loves rye bread and I like wheat, so it's a combo that we both can enjoy. The 15 grams of instant yeast make it rise nicely.
