- 45 grams dates, pitted
- 60 grams raw sugar
- 335 grams bakers flour
- 35 grams cocoa
- 1 level teaspoon salt
- 1 1/2 level teaspoon Yeast dried or (1 Sachet)
- 180 grams WARM milk
- 1 level teaspoon vanilla extract
- 50 grams Butter
- 2 eggs
- 2 egg yolks
- 90 grams raisins
- 95 grams dark chocolate chips or pieces
- 1 egg, extra

1. Mill sugar for 3 seconds on speed 9 into caster sugar. Set aside.
2. Chop dates for 5 seconds on speed 8.
3. Add caster sugar, baker’s flour, cocoa, salt, yeast, milk, vanilla extract, butter, eggs, egg yolks, fruit and choc bits into TM bowl.
4. Knead for 1 ½ mins on interval speed.
5. Either leave in TM bowl or in a buttered bowl until dough doubles in size (approx.. 1 hour).
6. Preheat oven to 200degrees C. Line 6 hole extra-large muffin tin with paper cases.
7. Divide into equal portions and press into pan holes.
8. Cover loosely and leave in a warm place for about 30 mins.
9. Brush each panettone with extra egg.
10. Bake for about 25 minutes, stand in pan for 5 mins then cool on wire rack. Dust with icing sugar.

Best enjoyed when fresh out of the oven!
