Ingredients
Buckwheat Pancakes Dairy Free Gluten Free
- 500 grams coconut milk, (or rice milk, almond milk, soy milk, or another dairy-free milk of your choosing)
- 2 eggs
- 50 grams Maple syrup
- 1 tsp Vanilla Bean Paste, Or vanilla essence
- 40 grams oil, of your choosing. I use sunflower.
- 200 grams all-purpose gluten-free flour, I use Aldis
- 80 grams buckwheat flour
- 1 tsp sea salt
- 2 tsp Baking Soda (Gluten free)

Add all ingredients in order as listed.
Mix 40 seconds speed 4. If needed scrape down sides and mix again speed 4 for a few seconds.
Let the batter sit for 10-15 minutes to allow the buckwheat to absorb the liquid slightly (don't skip this step; it will create lighter, fluffier pancakes than if you rush through this).
Grease a pan with coocnut oil and heat over medium heat. Add the batter, about 1/4 cup at a time, to the hot skillet and cook each side for 1-2 minutes, flipping with a spatula when small bubbles appear accross the surface of one side, and then removing when both sides are lightly browned. Continue to do this until all of the batter has been used. Cover finished pancakes with a paper towel or clean kitchen towel to keep them warm while finishing the rest.)

Mixture will keep in fridge for a couple of days.
Pancakes can be frozen and reheated. Place greaseproof paper between layers.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).
